Spanish Quinoa

Ingredients:

  • 2c. dry (raw) Quinoa, rinsed
  • 1 -1.5 Tsp. canola oil
  • 2 cloves garlic, crushed
  • 1 medium onion, chopped
  • 1 tsp. chili powder or Paprika (I use Paprika)
  • 1/2 tsp. dried oregano
  • 1/2 tsp. ground cumin
  • 1/2 c. frozen peas
  • 1 small can (drained) or 1/4 c. sliced olives (black or green)
  • pinch of cayenne pepper
  • 8 oz. tomato sauce
  • 1.75 c. or 1 can chicken broth

Directions:
Heat oil in large saute pan, add onion and cook until partially translucent. Add crushed garlic and cook until onions are translucent. Add spices and mix with onions. Next, add rinsed dry Quinoa and saute for 3-4 minutes, stir frequently. Add frozen peas, olives, tomato sauce, and chicken broth. Bring to a boil. Cover and reduce heat and simmer 20 minutes, or until liquid is absorbed.
